GERMAN POTATO SOUP

5-6 golden potatoes, peeled and cubed to about 1/2" cube..
2 tbsp of olive oil
2 cups of onion
2 tsps of sea salt
2 tsp black pepper
2 tsp garlic
4 cups chicken bone broth
2 tsp of oregano
Fresh chives
Fresh lemon juice
Combine all ingredients in a large soup kettle; place on medium heat and bring chicken broth to a boil; cook until potatoes are soft and could be mushed with fork. Either leave potatoes in soup as is (cubed) or mash the potatoes back into the soup. Soup should be thick and warm when served. Serve with fresh french bread or similar texture bread.
